A very popular savoury preserve. The onions are cooked gently so they become sweet and rich. However, for balance there’s still a slight tartness due to the balsamic vinegar. Finally the spices add just a bit of warmth. Better still, it’s hard to think of something it doesn’t go with. It’s especially good with grilled steak, or terrines and pates… it’s probably the most useful preserve we make.
