Our handcrafted Easter Simnel cake is exquisitely prepared using the finest ingredients and baked with care to an age-old recipe honouring the signature excellence and indulgent flavour of Pohutukawa Pantry.
Rich yet delicately balanced, the cake features a buttery almond base infused with bright citrus zest, succulent fruits, and warming spices. Each cake is elegantly finished by hand with eleven beautifully sculpted marzipan daisies, symbolising the eleven disciples. A generous layer of smooth marzipan is folded through the centre, creating a luxurious depth of flavour in every slice.
