Ballantynes Classic Cakes Lemon Meringue Cake
We decided on making this cake when thinking of the traditional lemon meringue pie but in a cake “format”. The filling is made of lemon curd (very rich and full of lemon flavour) and a light lemon cream, the sponge cake is soaked on lemon syrup too. The lemon flavour is in every item of the cake and the Italian meringue is the perfect finish.
- Vanilla sponge, lemon syrup, lemon curd, lemon cream.
- 24cm diameter cake is based on 18 slices per cake
- 15cm diameter cake is based on 15 slices per cake
